The amber ale went into the keg last night after eight days in the secondary fermenter.  The first step I took in transferring the beer was to clean and sanitize everything that would touch it, which included the siphon and keg.  Just as in The Final Countdown I siphoned the beer into the keg, let it chill, and pumped in CO2.  I set the regulator to 10psi to get my desired level of carbonation.  In just a couple day, the beer will be ready to enjoy!

I also took the opportunity to measure the final gravity of the beer.  This measurement will tell me how much sugar was converted into alcohol and can be used to estimate the alcohol content.  More on this topic in a later posting.

The last thing I did before calling it a night was take a taste of the beer.  The ale was light bodied – lighter than I was expecting – and very smooth.  It had a nutty character and sweet caramel finish.  Overall, I’m very excited for this batch to be ready!
