The weather forecast has been bleak in San Francisco as of late.  Rain fell from the heavens last week and snow (yes, you read that correctly, SNOW!) is predicted for this week.  Hapa’s Brewing loves America and wasn’t about to let a few rain drops spoil the birthday of our first President.  While some people think that cake is the ultimate birthday food, we have a slightly different opinion: nothing says “Happy Birthday” like a twelve pound brisket.

A quick stop at Cash & Carry Saturday, a trim of the fat, and an ample application of rub later and the stage was set for an epic birthday celebration!

More fat was left on the meat than the last brisket cook.  As the fat breaks down during the twelve hour cook it creates a natural baste that keeps the meat moist.  The rub used included paprika, salt, black pepper, raw sugar, granulated garlic, onion powder, chili powder, and cayenne pepper for some kick.  The meat was wrapped and spent the night in the refrigerator to let the rub soak in.

A five AM wake up call ensured the meat would be ready by dinner.  It also ensured a cranky cook, but anything for General Washington.  The cooker was fired up using oak wood for smoke flavoring.  After the first two hours, the meat was basted every hour using a mop of beer, olive oil, cider vinegar, cut onion, diced garlic, and worcester sauce.

At hour ten, additional briquettes were lit using a Weber Chimney Starter and were added to the cooker.  The internal temperature of the meat also begun to be monitored with a Digital Probe Thermometer.  At hour twelve the meat reached the target of 190 degrees and was removed from the smoker.  After a twenty minute rest, it was carved up and served with home made jalapeno cornbread and caesar salad just like they did it at the Constitutional Convention.  Happy birthday President Washington!
