Yesterday, after eight days in the primary fermenter, I took some time to transfer the amber ale into a Glass Carboy for secondary fermentation.  This process will look very similar to the one I undertook in Fermentation: Fun Enough to do Twice!

Transferring the beer also afforded me the opportunity to taste the beer.  At this stage, the ale still has some fermentation and conditioning to go through, but it is possible to get an idea of what the final product will taste like.  In this case, I was very encouraged by what I had in my glass.  The beer was smooth, with well balanced malt and bitter flavors.  It was as good as a warm flat beer can be!

One more week in the carboy before kegging and carbonation.  Can’t wait!
